These industry organisations provide excellent information relating to HSE across a wide range of subjects.
Guidelines about health assessment and managing health refer to the importance of safe food and water but are not designed to go into great detail.
Other resources are available which provide information about food safety, the principles of which are relevant to all catering operations.
These include documents from the World Health Organisation (WHO), The UK Public Health Laboratory Service (PHLS), UK Department of Health (DoH), UK Health and Safety Executive (HSE) and the UK Food Standards Agency (FSA).
